This is what my AWESOME husband, Kiley made in our crock pot yesterday.
Here is his recipe for Crock Pot Chicken Tortilla Soup:
- 1 can corn
- 2 can diced tomatoes
- 1 can red enchilada sauce
- 1 can chicken broth
- 2 cans of black beans
- 1 pkg cream cheese
- 1 lb boneless skinless chicken breast
- small onion
- garlic cloves 6 or more
- 8-10 corn tortillas
Dice onion and garlic
Add all above in crock pot + 12 oz water
Set tortilla & cream cheese aside.
Cook 8+ hours on low. Add cream cheese after 4 hours.
About 30 mins before serving cut tortilla into 3/8″ strips and toss in crock pot and serve.
Top with cheese, peppers, sour cream, whatever you like.
This soup is so good! In fact I had some for dinner last night and for lunch today.
We like to substitute the canned beaned with dried beans that soak over night, tomato with no salt added, & fat free cream cheese
